Karakara Senbei is a popular okashi (traditional Japanese confection) that has been around since the Edo period. A specialty of the Shonai region in Yamagata Prefecture, inside each triangular senbei cookie is a little toy that makes a kara-kara sound when shaken, hence the name. Karakara are baked with 100% brown sugar from Yonaguni Island of Okinawa Prefecture for a deep sweetness in each crispy bite. Craftspeople carefully fold the hot dough of each cookie to hold one of more than 150 kinds of handmade Japanese folk toys and traditional accessories.
