Make Your Own Tofu Kit

You can make your own tofu with this handy kit! The kit is made from hinoki (cypress) wood which makes the container durable and water resistant. It also comes with cloths to help you press, shape, and strain the tofu, plus nigari, a magnesium chloride solution that helps the tofu coagulate. You can use soybeans or one liter of full-fat, unsweetened soy milk to make two cakes of tofu.

How to Use

Step 1. Make Soymilk!

Wash two cups of soybeans and let them soak in six cups of water overnight. Dissolve one packet of nigari into a quarter cup of water. Put the soybean mixture in a blender for two minutes. Boil six and a half cups of water, add the mixture, and return to a boil. Reduce to a low simmer for eight-ten minutes. Use the thicker cloth to strain the mixture.

Step 2: Make Tofu!

Take your homemade or store-bought soy milk and heat on low to 80 degrees. Transfer to a bowl and begin slowly adding the nigari mixture. Stir it twice. After 15 minutes the tofu will be solidified. Wrap the tofu in the thinner cloth and place in the maker to begin draining it and place the lid on the maker. Place a heavy can or bottle (about 1b of weight) on the lid to help drain out the water and leave for 15 minutes. After the tofu is hardened, remove it from the box still wrapped in the cloth, and transfer to a bowl of water. Remove the cloth and leave it in water for 30 minutes. Drain the water and serve!
