Dojou Sukui is a comical folk dance from Shimane prefecture that imitates scooping dojou (fish) with a basket to the rhythm of yasugibushi (folk music). This deliciously sweet manju (bun) with pink Amaou strawberry milk filling is carefully baked like a silly hyottoko (mask), complete with tenugui (head cloth) to represent the comical nature of the performers.
